Maria's NuWave and Judy's new fridge - we'll have to rename this the cooking channel.
I'm back and boy, have I missed my chair. I discovered I really don't like traveling - used to be exciting - now it's packing, unpacking, uncomfortable beds and showers with sprays so hard, it actually hurts. LV wasn't too hard, especially when I was winning
. If only I could travel with my laz-y-boy. Writing conference was difficult, sitting all day. I wisely wore my brace which helped tremendously. I learned I must rewrite my entire book
but I did learn so much. I've been taking my 'cocktail' before bed and hopefully, a little rest this week (yeah right, will be playing catch up) I won't be the worse for wear.
OK, here's a helpful cooking hint for both of you and anyone else. I prefer ground turkey but ground beef works just as well. I buy 5 lbs or more at a time. Carmelize onions with a little garlic and any other herbs you might like. Add the meat and brown, then freeze in meal portion sizes. Then, dinner takes 1/2 hour to prepare. Ground meat can be used for so much;
tacos, meat sauce, meat pies, shepherds pie, casserole, lasagna, sloppy joe, chili, nachos... Pop it in the microwave for a quick defrost and have at it.
Instant rice or potatoes - add frozen vegis like peas to the water. Use leftover soup with the water for added flavor. Baked potatoes for dinner using all the leftovers as various toppings, perhaps with some melted cheese.
Judy, I'm very pleased your daughter agreed to see a therapist but I fear one session isn't going to make much difference. If you're going to be strong for one thing, it's insisting she gets the help necessary, even if Jeff has to drag her. She's hurting and both parents have to do what they have to do. I'm sending you some Jewish guilt to use on him if doesn't want to get involved. He got involved when it came to making her - he owes her.
